Easy Weeknight Tacos with Rice Cauliflower

Everyone loves taco night and this is a great way to add a healthy ingredient to your family's meals. In this video, we'll show you how to add riced cauliflower to a simple taco dish. This makes the recipe healthier because it reduces the fat and it also saves money. Whether you're a beginner or a seasoned taco maker, this recipe is a must-try and it’s so easy!

Easy Any-Night Tacos


Ingredients:

1 tablespoon olive oil

½ yellow onion, chopped

1 pound ground meat (turkey or beef)

2 cloves of garlic, crushed

1 cup riced cauliflower

¼ cup water or salsa

2-3 tablespoons taco seasoning, of choice


Method of Preparation:

Heat a large skillet over medium high heat. Add olive oil and wait until oil is shimmering.

Add the onion and saute until golden brown.

Add the ground meat and crumble and cook until almost cooked through.

Add garlic and riced cauliflower and cook for several minutes until combined.

Add water and sprinkle with taco seasoning. Stir until meat and cauliflower are nicely coated.

Put a tight-fitting lid on the pan and allow the meat mixture to steam for 5 minutes, stirring occasionally.


Serving Suggestion:

Serve the taco meat in hard taco shells or tortillas along with your favorite toppings.
